East Pole Desert Lime

East Pole Desert Lime features, well, Desert Limes!  They’re not as tart as a standard lime, slightly sweeter and with a distinctive herbal character.  We use ginger for freshness and spice and when turmeric also joins in, these three key ingredients really start to sing. 

This is a combination of fruit and spice without being overt and we like to serve the desert lime with Capi garden tonic, a wedge of fresh lime and a slice of pickled ginger.

Desert Lime

Native limes don’t appear as tart as regular limes, a bit sweeter perhaps and certainly an engaging herbal note than almost represents mint or menthol.

Ginger

Fresh spice is what ginger brings to the party and is also the bridging gap between the lime and turmeric, making it a perfect party of 3.

Turmeric

Earthy bitterness with hints of citrus is what turmeric is all about, in the gin it really gives and extra layer of complexity with harmonizing the the other flavours.
